There’s nothing that comes close to homemade cookies, and these spiced gingerbread biscuits are easy to make at home.
Combining a sweet and buttery flavour, along with mild and zesty ginger, these biscuits make for a satisfying treat.
Fill up your cookie jar with these delicious spiced gingerbread biscuits, which make the perfect accompaniment to a cup of tea, an ideal lunchbox snack, or a lovely food gift idea for a special occasion.
Ingredients
250g butter, softened
1 cup brown sugar
1 cup golden syrup
5 cups plain flour
4 teaspoons ground ginger
2 teaspoons bicarbonate of soda
Method
Preheat the oven to 160°C.
Using an electric mixer, cream the butter and sugar until pale and smooth. Then add the golden syrup and ground ginger until the ingredients are well combined.
Gradually mix in the flour and bicarbonate of soda until a smooth dough forms.
Sprinkle some flour on a clean surface before rolling out the dough to 1cm thick. Use a cookie cutter to cut out individual biscuits.
Place the biscuits on a baking tray and bake in the oven at 160°C for 8-10 minutes.
Remove the biscuits from the oven and allow to cool.
Decorate the biscuits with a dusting of icing sugar or with royal icing. Or simply enjoy them plain.
Note: this recipe makes a large quantity (approximately 50 biscuits). Simply halve the recipe to make less.
