Raspberry, cashew and coconut bliss balls

If you’re looking to make a healthy yet sweet and satisfying snack, you’ve got to try these raspberry, cashew and coconut bliss balls.

Combining the tart flavour of raspberry and the sweetness of coconut, these delicious bite-sized treats can be enjoyed at any time.

These bliss balls make a great option for a healthy lunchbox snack, a tasty titbit alongside a cup of tea, or a quick bite between meals.

Raspberry, coconut and cashew bliss balls

Ingredients

1 cup frozen raspberries

12 large medjool dates

1 cup raw cashews

2 cups desiccated coconut

1 teaspoon vanilla extract

Pinch of salt

2 tablespoons desiccated coconut

1 tablespoon of vanilla protein powder (optional)

Method

Roughly chop the dates and cashews.

Place all ingredients into a food processor and pulse until thoroughly combined and a smooth paste is formed.

Take a tablespoon of mixture at a time and roll it into ball. Then roll the ball in extra coconut. Repeat with the remaining mixture.

Store in a container in the fridge.
