Vegan coconut, almond and lime bliss balls

For a sweet yet nutritious treat, you cannot go past these vegan coconut, almond and lime bliss balls.

Packed full of good ingredients and combining the complementary flavours of coconut and lime, these bliss balls are sure to satisfy your sweet tooth.

And the best part? These vegan treats are easily portable – simply pop them in a container and enjoy them as a healthy lunchbox snack for work, school or at a picnic with friends.

Vegan coconut, almond and lime bliss balls

Ingredients

1 cup raw almonds

1 cup pitted dates

1 cup shredded coconut

Juice of 1 lime

Zest of 2 limes

2 tablespoons shredded coconut (to roll balls in)

Method

Place all ingredients, except the 2 tablespoons of shredded coconut, into a food processor and blitz until a smooth consistency forms.

Spoon a teaspoon of the mixture into your hand and roll into a ball. Repeat with the remaining mixture.

Roll the balls in shredded coconut to coat and refrigerate.

Makes 12 balls.
